Just finished making some beignets in honor of Mardi Gras also known as Fat Tuesday! Serve with espresso chocolate sauce and a cup of coffee or café au lait.

Espresso Chocolate Sauce recipe: In a small saucepan, heat 1/4 cup cream (I used low fat milk cause that’s all we had), 1/4 cup espresso or strong coffee (chicory coffee would be perfect), and 1/8 cup evaporate cane juice (or granulated sugar). Whisk and bring to a boil. Place 4 oz. good quality chopped semisweet chocolate or chips in a heat safe bowl. Pour the milk-coffee mixture on top of the chocolate and mix until smooth. Serve with the beignets or some fruit too!
My dad is also making some Filipino Fried Chicken, which is my grandmother Inang’s (my Mom’s mother) recipe, can’t wait!

Thanks. I used to be a big coffee drinker when I was in college, but now I get jittery so I drink decaf when I want some coffee. Nothing like a good cup of coffee and a sweet treat 🙂

By the looks of your beignets, I would have a hard time stopping from eating them all!
